Teacher

John Woitovich, of Cross-Sound Farm, is our local expert in sustainable, ethical homestead meat production. He is a middle school teacher who runs a family farm on his 2 acre homestead in Deep River, CT. John's easy-going attitude influences his choices in what he takes on; he wants high quality, easy to maintain, inexpensive food. He has learned how to set up sustainable systems, on a budget, that are well designed and require very little time to manage.

What will I learn in the Workshop?

The objective of this course is to introduce attendees to the process of small-scale, ethical meat production for your personal homestead or backyard. The goal is to educate individuals on the importance of the ethical treatment of animals while still providing families with a healthy, sustainable, local source of meat. Even if you do not have much acreage, you will be surprised how much meat can be produced on a typical grass filled backyard.

While several livestock options will be discussed, the main focus will be on chicken and meat rabbits. Attendees can expect to learn:

  • Different options for livestock
    • Equipment needed
    • Pros and cons
    • Care and management
  • Tools of the trade
  • Processing and butchering
  • Food storage
  • Pasture management for chickens and rabbits
  • Breeding schedules for rabbits
  • Maintaining rabbit breeding stock
  • Rabbit manure garden fertilizer

Attendees will leave with a packet of information, including some favorite recipes.
